Pork Barbecue (Filipino Style)

Description

Pork barbecue is the most popular street food in the Philippines.  You can almost always find a vendor selling this on a nearby street corner where you live.  I remember the inviting smell of the barbecue grilling that you have no choice but to buy a couple of sticks and eat it before heading home from school.  This is best cooked on a grill with charcoal although an electric or indoor grill works too.

Ingredients
    Basting Sauce Ingredients
  • 3 lb pork butt/shoulder cut into 1 inch wide by 1/4 inch thick slices
  • 1 cup banana ketchup
  • 1 cup soy sauce
  • 2 cup brown sugar
  • 1/2 cup lemon juice
  • 1 cup 7-Up
  • 4 clove garlic (minced)
  • 1 tsp black pepper
Instructions
  1. Mix well together all ingredients and set aside 1 cup of marinade for basting later.  

  2. Pour marinade in a large container and soak the pork slices completely.  Cover and let marinade for at least 4 hours or better yet overnight.

  3. When ready to cook, take out from refrigerator and let sit on room temperature for about 15 minutes.

  4. Soak skewers in water then thread pork slices (about 4 to 5 pieces per skewer)

  5. Heat the grill.  Once hot, grill skewered pork about 5 minutes on each side, basting with the sauce after each flip.

  6. Cook for another 5 to 10 minutes, flipping and basting until the pork is no longer pink.  Remove from grill, serve and enjoy!!
