Embutido (Filipino Style Meatloaf via Instant Pot)

This Filipino version of meatloaf is very versatile as it can be served as breakfast, lunch, dinner or snack.  I like serving it in pandesal or Hawaiian bread.  It is also good on rice with sunny side up eggs.  It is always a hit at Filipino parties, gatherings and potlucks.  My mom’s “secret” ingredient is Spam which adds flavor to the meatloaf.  I like it pan fried as it brings out the smokiness of the Spam.

  1. In a food processor put the hotdogs, spam, onion, red bell pepper and carrots and pulse a few times until combined.  You still want to see some small bits of the ingredients so don’t overly process.

  2. Transfer in a large bowl and add the ground pork, eggs, sweet relish, raisins, breadcrumbs, salt and pepper.  Mix until well combined.

  3. Do a taste test first.  Heat some oil in a frying pan and scoop a teaspoon of the pork mixture and cook about 5 minutes.  Try and adjust salt and pepper according to your liking. 

  4. Scoop ½ cup of the mixture on aluminum foil.  Shape into a log, tightly wrap the aluminum foil and close both ends.  Make sure the logs fit the size of your Instant Pot.  Continue until you finish all the mixture.

  5. Add 2 cups water to the inner pot, place trivet and place embutido rolls on top of the trivet.  Turn and lock lid and place.  Select Pressure Cook and set on High Pressure for 15 minutes.  When cooking is done let pressure release naturally.

  6. Unlock, carefully remove from inner pot and let cool.  Refrigerate or freeze until ready to serve.

  7. To serve cut into slices and arrange on a platter.  You can also pan fry it.  Serve with banana ketchup.  Enjoy!!
