Adobong Manok at Baboy (Chicken and Pork Adobo via Instant Pot)

Adobo is one of those staple dishes in the Philippines.  There are various versions of this Pinoy favorite depending on the region.  Some use vinegar only.  Some add coconut cream.  Some add eggs and potatoes for a heartier dish.  This recipe is the most basic which my mom makes.  To keep it authentic I use the Datu Puti brand of vinegar and soy sauce.

  1. Set the Instant Pot on Saute.  Heat up the vegetable oil and saute the garlic until fragrant.

  2. Add the chicken and pork and cook until lightly browned.

  3. Add the rest of the ingredients except for the 1 tbsp cornstarch and 1 tbsp water.  Turn and lock the lid in place, select the Pressure Cook setting and program for 15 minutes on High Pressure.  Once done, let pressure release naturally for 10 minutes and then quick release remaining pressure.

  4. Unlock lid. Remove meat bay leaves from the sauce.  Set the Instant Pot on Saute.  Mix the 1 tbsp cornstarch and 1 tbsp water in a small bowl to create the slurry.  Once the sauce is boiling, stir in the slurry and let simmer until slightly thickened.

  5. In a frying pan, heat some oil to medium high heat.  Fry the chicken and pork until browned to your liking then place on a serving dish.  Pour some of the sauce over the meat and serve the remaining sauce on the side.  Enjoy!!

Note

If you like you can remove the chicken and pork from the sauce and broil in oven for about 10 minutes until browned.  Plate the broiled chicken and pork pieces and serve the sauce on the side.
