Puto is a traditional Filipino cake made of rice flour. This recipe uses regular flour as it is sometimes difficult to find rice flour. When I was young, I remember my aunt buying freshly made puto for us whenever we visited her. They are soft and fluffy cakes. The cheese and salted eggs adds a little bit of contrast to the sweetness of the cake. Yumm!!
In a large mixing bowl combine flour, baking powder, sugar and mix well. Pour the melted butter, milk and water and whisk until batter is smooth.
Grease the silicone molds or cupcake pan with margarine or butter.
Pour puto batter about 2/3 of the mold. Top with cheese slice or salted eggs and cover with foil.
Add water to the inner pot of the Instant Pot and place trivet. Stack molds on top of trivet.
Turn and lock lid in place. Select Pressure Cooker and Set on Low for 15 minutes. When cooking is done, let pressure release naturally for 10 minutes then quick release.
Unlock lid and remove molds. Allow to cool on a baking rack then remove from molds.
Arrange in a platter, serve and enjoy!
