It is a tradition to serve this popular Filipino dish at birthdays and other special occasions because it symbolizes long life. Cooking it is actually quick and easy. It's the preparation that takes time because of all the slicing and chopping of the ingredients. To save time (and also because I hate chopping) I buy vegetables that are already shredded or chopped. This recipe has chicken and shrimp but you can also use pork and sliced Chinese sausage.
Soak the rice noodles in warm water for about 10 minutes
In a wok heat oil on medium-high heat. Saute the garlic and onions until fragrant.
Add the carrots. snow peas and cabbage and cook for 2 to 3 minutes. Remove from wok and set aside
Add some more oil and cook the shrimp for 2 to 3 minutes. Remove from wok and set aside
Add the chicken stock, soy sauce and oyster sauce and bring to a boil
Add the rice noodles and stir.
Add all the cooked ingredients to the noodles, reduce heat to low and mix everything until the noodles soak most of the liquid
Season with salt and pepper according to your liking.
Transfer to a serving platter and garnish with lemon slices. Enjoy!!
