Leche Flan via Instant Pot

Description

My mom has a sweet tooth and likes to eat something sweet with her food.  Leche flan is one of her favorite dessert.  This helped her eat more during her recovery in rehab.  I like the combination of 9 egg yolks and 1 egg because it produces a firmer flan.

Ingredients
    For the Flan
  • 9 egg yolks
  • 1 egg
  • 1 (12 oz) can evaporated milk
  • 1 (14 oz) can condensed milk
  • 1 tsp vanilla extract
  • For the Caramel
  • 1 cup sugar
  • 1/4 cup water
Instructions
  1. Make the caramel by melting 1 cup sugar and 1/4 cup water on medium/low heat until it turns into an amber color (about 15 minutes).  Do not stir!  Then evenly distribute in 3 llanera pans and let cool.

  2. In a bowl gently mix together the 9 egg yolks, 1 egg, evaporated milk, condensed milk and vanilla.  You want to avoid getting too much air bubbles which can affect the consistency of the flan.

  3. Once combined run mixture through a strainer and divide evenly in the cooled llanera pans with caramel.  Cover each pan with aluminum foil.

  4. Add water to the inner pot of the Instant Pot and place trivet with one llanera pan.  Turn and lock the lid in place making sure the steam release valve is in the sealed position.   Select High Pressure and program for 18 minutes.  When cooking is complete, quick release manually.

  5. Carefully remove the pan and repeat for the rest of the llanera pans.  Allow to cool to room temperature and then refrigerate before serving.

  6. To serve, run the edges with a small knife to loosen the flan.  Place serving plate on top and quickly flip.  Let it sit for about a minute before removing pan to allow the caramel to settle.  Remove pan, serve and enjoy!! 

Note

Llaneras are oblong shaped molds.  If you don’t have these you can also use 6 inch cake pans that will fit in the Instant Pot.
