My mom is from Lucban, Quezon and this is one dish that her hometown is known for. I always see this at our family gatherings and parties. The ingredients are similar to Menudo except that it is molded with beaten eggs in a llanera. It definitely makes a festive presentation on the table.
Set Instant Pot on Saute setting and heat up oil. Cook onion and garlic until fragrant. Add pork and cook until meat turns slightly browned. Add water and tomato sauce.
Turn and lock lid into place. Select Manual and program for 15 minutes on High Pressure. When cooking is complete, allow pressure to release naturally. Once done, remove from Instant Pot and let cool.
In a large mixing bowl mix the cooked pork, salt, pepper, hotdogs, bread crumbs, carrots, red bell pepper, sweet relish and raisins until well combined.
Grease 3 llaneras and arrange sliced eggs and red bell pepper slices on the bottom.
Distribute about half of the beaten eggs in the llaneras.
Scoop and evenly distribute the pork mixture into the llaneras. Pour the rest of the beaten eggs on the sides and cover with aluminum foil.
Add 2 cups of water to the inner pot and place trivet inside. Stack llaneras on top of each other on top of the trivet.
Turn and lock lid into place. Select Manual and program for 10 minutes on High Pressure. When cooking is complete, allow pressure to release naturally.
Unlock and using tongs carefully remove the llaneras and place on a cooling rack to cool.
Once cool place llanera top-side down on a serving plate and lift to release from the mold. Serve and enjoy!!
Llaneras are oblong shaped molds. If you don’t have these you can also use 6 inch cake pans that will fit in the Instant Pot.
