Afritadang Manok (Chicken Stew in Tomato Sauce via Instant Pot)

Description

This is one of the tomato sauce based dish belonging in the family of Menudo, Mechado and Kaldereta.   Growing up I actually get confused because they all look the same to me.  My mom’s explanation to me is that Afritada uses tomato sauce, Menudo uses tomato sauce and tomato paste while Mechado and Kaldereta uses tomato sauce, tomato paste and soy sauce.  Menudo uses smaller cubes of meat with liver and hotdogs while Mechado uses bigger cuts.  Afritada mainly uses chicken but you can also use pork, Menudo uses pork, Mechado uses beef and Kaldereta uses goat meat but you can also use beef.  Confused yet? LOL

Ingredients
  • 1 1/2 chicken thighs/legs
  • 4 cloves garlic minced
  • 1 onion diced
  • 1 small piece of ginger minced
  • 1 cup chicken broth
  • 1 8 oz can tomato sauce
  • 4 hotdogs sliced
  • 1/2 lb baby potatoes
  • 1/2 lb baby carrots
  • 1 red pepper sliced into strips
  • 4 bay leaves
  • 1/2 tsp black pepper
  • 1 tbsp salt
  • 2 tbsp lemon juice
  • 2 tbsp vegetable oil
Instructions
  1. Set the Instant Pot on Saute.  Heat up the vegetable oil and brown the chicken pieces.  Set aside.

  2. Add some more oil and saute garlic, onions and ginger until fragrant.

  3. Turn off Saute setting and put back chicken pieces.  Add the broth, tomato sauce, hotdogs, potatoes, carrots, red pepper, bay leave, salt, pepper and lemon juice and mix together.

  4. Turn and lock the lid in place, select the Pressure Cook setting and program for 10 minutes on High Pressure.  Once done, pressure release manually.

  5. Unlock lid, remove the bay leaves, add salt and pepper according to your liking and enjoy!!
