Bulalo (Beef Shank and Marrow Soup via Instant Pot)

One of the many comfort foods in the Filipino menu, bulalo is made of beef shank which is cooked until it is” fall of the bone” tender.  I made this for mom during her recovery from surgery as it is hearty and flavorful.   The addition of vegetables such as potatoes and bok choy makes it very nutritious.  You can also use cabbage and corn as other vegetables.  It is one of those “set it and forget it” kind of cooking so it’s very simple to make.

  1. Put all ingredients except bok choy in the inner pot of the Instant Pot.

  2. Turn and lock the lid.  Select Pressure Cook setting on High Pressure for 25 minutes.  When done allow pressure to release naturally for 10 minutes and then quick release the remaining pressure manually.

  3. Remove beef shank and potatoes from the pot except for the broth.

  4. In a large bowl, strain the remaining contents and return the broth in the inner pot.  Select the Saute setting.

  5. Add the bok choy to the inner pot and cook for 5 to 7 minutes.

  6. Transfer to a serving bowl and serve.  Enjoy!!
